Creamy, Chunky and Easy Guacamole

This super easy guacamole recipe is not only super delicious, but also one of your best allies for inviting your little ones to eat veggies. Its creamy texture makes it the perfect dip to dig your veggies in.

Many people are scared of eating guacamole because of its content of fat. As opposed to what people used to think, avocados are full of healthy fat, which is essential for your body and brain. Kids in particular need fat for their development and growth. Fat also helps your body absorb some vitamins and are essential for hormonal function. However, make sure you and your kids consume healthy fat and try to consume less or avoid trans-fat.

Avocados are a great source of monounsaturated fat, carotenoids (check this post where I explain the importance of carotenoids), vitamins E, C, K, folate, magnesium, potassium, omega 3 fatty-acid, fiber and protein.

When it comes to cooking, avocados are quite versatile as they can be used in sweet and savory options, like the classic and glamorous guacamole.

In a few weeks’ time my little one is turning 2 years old, so we are having a little birthday celebration and of course this guacamole will have its place on the table along with some veggies, like cucumbers, carrots and baked sweet potatoes. Guacamole is actually a great dip to offer in your celebrations.

Ingredients:

3 medium ripe avocados

½ medium onion

1 chopped medium tomato

½ a lime’s juice

½ Tbsp olive oil

3 Tbsp chopped coriander

¼ tsp Himalayan salt

Black pepper to taste

How to:
1. Add the avocados, salt, lime and olive oil to a bowl

2. Mash and mix the avocados with a fork until you get a creamy texture

3. Add the chopped onion, tomato and coriander

4. Mix all ingredients well and garnish

5. Enjoy!
